An ancient strain of cultivated wheat, best described as the heirloom version of spelt. A first-class grain measuring 6 to 8 mm long and slightly pearled to eliminate the need for soaking. Makes a great risotto.

Preparation and Cooking Instructions:
Stove Top: Bring 2 quarts water or stock to a boil. Stir in 2 lbs. Farro, reduce heat and simmer covered for 25-30 minutes, or until desired texture. Remove from heat and serve.
Yield: 24 half-cup servings.

Roland Couscous is made from semolina of wheat and water (like pasta) mixed to form a paste and rolled back and forth until pellets form. The edges are slightly irregular and the color is an off-white. This nutty-flavored product is light and fluffy and makes an excellent side or main dish.
Preparation: Use 1/2 cup couscous per person. Measure desired amount of couscous into a bowl, add an equal amount of lightly salted boling water. Let the couscous sit for 10 minutes. Then fluff with a fork. Add a small amount of butter or Roland Olive Oil to taste. Squeeze fresh lemon juice into couscous and mix.
